Banana bread is one of my favourite sweet treats – espesh with a bit of almond butter on top! Here is a lil vegan recipe for you so you can have your cake and eat it too – enjoy!
What you’ll need:
3 brown bananas (the bigger the better ;))
100g brown sugar
3 tsp cinnamon
3 tsp of baking powder
225g of plain flour (you can use self-raising, but change the baking powder to 2 tsp)
75g vegetable oil
any other toppings i.e. almond butter, nuts, choccy chips!
Pre-heat the oven to 200 degrees celcius
Mash the bananas with a fork and mix well with oil and sugar
Add flour, cinnamon and baking powder
Mix well and add any additional ingredients i.e. choccy chips or nuts!
Bake in a grease-proof paper lined tin for 20 minutes
Pull the loaf out and wrap foil over the top then bake for a further 20-25 minutes or until baked through
