When you’re juggling work, uni, the gym & being taken over by the flu – cooking is usually the last thing that gets time thrown at it. Whenever I find myself in one of these weeks, I always make massive batch meals that I can chuck in a Tupperware box and take with me wherever I need to be, as well as reheat when I’m at home for a quick fill me up. The meal I always go for is gluten-free pasta with pesto and veggies, it’s so filling, the veggies are packed full of goodness and the pesto provides you with some healthy fats for good measure.

You will need:
1/2 a brown onion
2 cups of sweetcorn
1 packet of gluten-free pasta
1-2 cloves of garlic
salt to taste
This really isn’t a complex recipe, all you need to do is chop the veggies and sauté them in a pan with some coconut oil and garlic. Then cook the pasta as per box instruction, stir some pesto through once drained, and add the veggie mix! Voila! Like I said before, I usually make 4-5 servings of this and eat it over the course of a few days at uni or work but it also makes a great dish to take to a BBQ, a pot luck dinner or to give to kids!
Another go-to meal of mine is to use this veggie mix over some mashed sweet potato – it’s my ultimate healthy comfort food!
